that actually does not surprise me.

i get my hamburger from a butcher. It looks and smells nothing like the hamburger i get for any (but hivee butcher shop) grocer store that has pre-packaged meat.

The stuff from the butcher looks fresh, smells good, and hell looks good enough to eat raw.

the stuff from the store looks wet (don't know how else ot describe it), smells off. it taste fine if you are mixing with something though such as taco's. wich is the only time we use it.

Have you ever worked with ground hamburger? It's already one step away from pink slime as it is.

its a pretty rare occasion we eat ground beef. for the few things we make that require ground meat, we use ground turkey.

It's a lot easier to control fat content when it has already been removed to be re-added.
Either way pink slime is basically just ground but ground even finer.
Good cuts of meat make far more money sold as steak then as ground beef, so it's already lesser cuts and leftovers as it is.

That said I rarely get anything other then ground chuck or ground round.

I love ground turkey for just about anything but in hamburger form. Hamburgers only work with ground beef.

I'm contemplating getting a meat grinder attachment for my KitchenAid mixer. Would be cool to take some decent cuts of meat from Costco and grind some fresh hamburgers

i find this to be the most disgusting part of the story

ABC News has learned the woman who made the decision to OK the mix is a former undersecretary of agriculture, Joann Smith. It was a call that led to hundred of millions of dollars for Beef Products Inc., the makers of pink slime.
When Smith stepped down from the USDA in 1993, BPI’s principal major supplier appointed her to its board of directors, where she made at least $1.2 million over 17 years.
Smith did not return ABC News’ calls for comment and BPI said it had nothing to do with her appointment. The USDA said while her appointment was legal at the time, under current ethics rules Smith could not have immediately joined the board.

i agree. we'll be buying more ground beef since summer is comming and thats burger season. I use to buy the beef logs in 3 or 5 pounds. now i get the stuff that looks good out of the butcher case made from 100% round, chuck or sirloin.

Will most meat markets grind whole cuts for you? If so, what's a good cut to grind for hamburgers?

It's going to get to a point where we have to raise and slaughter our own meat. It's pretty bad how they add crap in the stuff we eat. Is it that hard to actually do it right? I can understand the mass produced fast food stuff, but I would expect the supermarket stuff to be proper. It's not like they're selling millions per day per store like mcdonalds.

I'm ignorant about cooking but I think chuck - not too lean, get about 20% fat. Getting too lean is a tasteless burger.

Yeah.

On a related note, this revolving door industry/government corruption is also why nobody will EVER be prosecuted for the economic meltdown in 2008.

The sheeple don't know any better or have enough sense to care... There is a rapidly growing movement of folks who support organic food and natural methods of food production...

Is it any wonder cancer and other diseases are around... Certainly, all the chemicals people are eating aren't helping us all get healthier... It's greed plain and simple that's leading to these nasty food practices...

Yea but listen to the guys above arguing about fat percentage. If you just grind up a cow you don't know the fat percentage. They take the fat out, add it back in to make everyone happy. People are way too picky when it comes to consistency, fat content, protein content, how fresh it looks vs how long it is actually good to eat.

So they try and please everybody with all their additives bullshit. Its not like there is a 2% milk cow and a 1% milk cow. We get picky with our food, then they start picking with our food too much. Its not really their fault 100%.

I knew that they did this, but I thought it was done to maintain a redish color, and I didn't expect it to be 70% without a noticeable taste or texture difference. I wonder how true this is.

Which is why I'm saving up to buy land outside of LA. Can have some rabbits, goats and chickens.
