Upgrading memory >1gb

I have a Dell Latitude D800, 1.4ghz Pentium M, 512mb PC2100 memory...

I do a lot of Photoshop work. I also play a few games where I can hear a lot of HDD swapping from the Page File (ultimately, I would want to disable the paging file system and run everything off of memory).

So far, I'm thinking about going up to 1.5gb or 2gb. At what point does the performance increase become negligible?

It all depends on what you do, so basically you answered your own question. If you buy another gig and it's still paging a lot, then you don't have enough. In that case you'd have to ditch the 512 module and buy another gig.
And it's recommend that you not disable the page file in XP. I know we bash on Microsoft a lot, but in this case, you should trust that they knew what they were doing when they designed the virtual memory system in XP.
edit: I just did a quick search in the OS forum here regarding disabling the page file and found a coupe links. Read through those before making your decision to disable it.
