USDA Prime ribeye cap at Costco

Costco recently started selling this premium cut of steak. I try to buy it whenever I see it. Today it was $16.99/ lb which is a bargain. It has the butter rich beef flavor of the ribeye and the tender texture of a tenderloin. So best of both. If you haven't tried it, just buy it. You will not find better steak.

But they have not always sold rib eye cap. This is new (along with tomahawk chops)

Oh snap. It didnt occur to me even though I read it several times...CAP. Thats amazing. Will stop on the way home from work tomorrow and see if mine has it. Ive never had cap before.

They don't always have it and it sells fast when they do. I thought about not saying anything since I don't want fight others for this supreme cut of beef. The less others know about this cut of beef, the better. It's worth every cent.

Had to google this - so this is what those few tender bites of a ribeye are. Honestly, it almost seems a bit much for an entire steak as I'm not a fan of "tender/soft" meats like a filet mignon. I quite like the normal texture of the ribeye.

I am intrigued though - will have to give this a shot.

but some prime doesn't look like it belongs there... i seen some claiming to be prime that lack the marbling..

Grading is based on carcass not cut. So it's possible to have large variations in cuts within a cow.

You can find prime looking choice and choice looking prime.

they had prime brisket this weekend, was ~3.99/lb i think. though i wonder the actual value of 'prime' on something cooked low and slow.

heh the prices were about the same as kroger's choice.

I've bought it a couple of times. Costco sells it rolled and tied so it looks like a filet. I would suggest untying it and cooking it. Also, despite being prime these can, and usually do, have a vein of gristle running through them. At least the ones I've bought have, both times. Maybe I was unlucky but I figured twice in a row was not a coincidence.

yea i almost got it yesterday. but my bill was already going to be big enough. wife isnt a fan of impulse buys, even with my puppy dog eyes she said no. :'(

Thanks for the head up. I went to my local Costco yesterday and pick up all they have left of the Ribeye cap.

They are now vacuum packed and stored in my freezer. I love high quality beef despite the fact that I can’t really eat them as often as I want (high cholesterol issue on my part).

Eh, I'd rather not be swayed by the entirely bogus information touted by the industry that very much wants to keep purely grass-fed out of the market. Why are you swayed by another form of clear bias?

that being said, what matters to me is taste. grass-fed is crap compared to unnaturally grain-fed animals.

give me American grain-fed industrial beef or give me death.

The article was based on a university research study. Plus, I doubt Beef Magazine favors one over the other or is biased towards grain-fed beef. Nor am I aware that the grain-fed beef industry wants to keep grass-fed out of the market. I don't think they are too worried about it.

lol. I can appreciate them both on their own merits, but I also prefer grain fed. It doesn't have that mineral note that grass fed tends to have.
