$16.99 is not a bargain for ribeye- $7.99-$9.99 a pound is (and it sold for that two weeks ago at Costco). Made the best damned steak I ever had

Oh and I usually buy the 'bulk' boneless ribeye that requires you to slice it yourself for $6.99/lb at local meat shop.
Costco sells the Prime ribeye center for $17.99 /lb. That's the part of the ribeye left over after the removal of the cap. Ribeye center looks sort of like NY Strip.
Honestly, from a butcher standpoint, they're kind of ripping you off. They're removing a prime part of the cut and then selling it at normal price...kind of like getting double money out of the same cut.

Makes sense if you view ribeye center as just more tender NY Strip. It's not like ribeye center is bad cut of steak. I'll take ribeye center over NY Strip at the same price.

I did salt, pepper, cast iron, garlic (roast) and butter to baste. My cuts were kinda thick so technically it was more cube and I did about 2 minutes each side but that only got me to rare. Probably gotta finish off in the oven or take it to 3.5 or 4.
I just bough soem today and they are in strips. IF i pan fries it for 2 minutes per side, would it be medium rare or should i finish it off in oven?
