sorry but this is just my opinion on cooking a few of these steaks.
Well done is going overboard. I'd say the cap tasted better to me at medium rather than my usually preferred medium rare.
I know what a ribeye cap is, I was just asking if it was bone-in or boneless.

regular ribeye is $10/lb @ costco
ribeye cap is $17/lb at Costco.
new:
usda ribeye prices dropped $1/lb at Costco to $9/lb.
prime ribeye cap prices went up $1/lb to $18/lb.
i finally got around to get the ribeye cap. It is indeed cheaper than the center...lol.

Beef is commodity. Commodity prices move up/down. If you could accurately predict commodity price movements, you would be gazillionaire. If you're that concerned about $1 price increase, buy 19 lb cryovac package. That's only $7.29/lb at Costco.regular ribeyes went up $1 to $8.99/lb at my Costco.

I know it's hard to believe but you can get tired of eating nice cut of beef the same way with the same spices. Sometimes, I use Dale's Steak Seasoning as marinade. I also use other marinades as well like using Italian dressings to marinate flank and skirt steaks. I also cook steaks plain with freshly ground pepper and sea salt and then eat it with wasabi or chimichurri sauce. chimichurri goes great with any cut of steak. I like it on ribeye as well. The spicy peppers in the chimichurri adds nice heat, fresh parsley adds spring fragrance, and the red wine vinegar cuts through some of the richness and fattiness of the meat.I get chimichurri, that goes well with skirt or flank steak if I remember correctly. Perhaps I am too old school, born of the camp that says marinating a nice cut of beef is indefensible.
as much as it pains me to say this, I;m leaning towards USDA Prime ribeye caps @ $20/lb isn't worth it.
they're good but not $20/lb good.
I don't taste the diff between Prime and Choice thus regular ribeyes (usda choice) @ $9/lb is a better value to me.
