Verizon Fios wiring question - setting up patch panel

Hello all

have a dilemma and wanted to see what other folks might do.

I have a new place which has cat5e ran to all of the rooms next to the coax as well as two in the office, and then a phone jack in the office and the kitchen

When verizon was out here installing they clipped my kitchen phone line short so there was no slack and they had to move the tool less punchdown block in their enclosure to a weird spot supported by only one screw.

When they left I decided to use a keystone cat5e jack on that phone line and then cut a patch cable in half, extending the line and terminating into their block (I also got the right screws and moved it back to where it should be)

But after looking at their config it seems those punchdowns just convert into RJ11 and then plug into their ONT

So I am wondering if it makes more sense to remove my RJ45 keystones, replace them with RJ11s, and then just run phone cable into the box directly

I am also thinking of doing this for a network line they ran into the box.

And for those who have patch panels, do you separate your phone lines out or just keep them in the lower positions, I was looking at starting with one of these (might need to add another at a later date)

disregard, I tried it and fail, the rj11 connections in there are for two separate lines, of which only one of mine is active, there is no way using connectors to add both jacks to one line, you've got to use the tool less patch method.
