What's the better option here? I am specifically looking at RX240 vs a Black Ice GTS 360. Is there a big difference? Fans are probably going to be NF F12.

You need to post more info like what all components will u connect to this rad. Which case u r using etc. 240mm thick rad will need high static pressure fans like vardar by ek or noctua fans. But if you go with thinner 360mm then u can use cosmetically better fans like Thermaltake riing n add some flair to the case. Thinner rad also allows push pull configuration in lesser space. Performance wise I don't think you will see night n day difference.

thick radiators vs thin...

This is usually on the fins per sqr inch raito the rads have.
Thin's will usually have a much higher fins per sqr inch density which will require high powered static fans. Definitely not the route one wants to go if they are after silence.

So most people usually ignore the thin rads, and go straight to the thick ones unless ur trying to jigsaw puzzle the radiator into a ITX case.

Performance wise?
Totally depends on what fans are being used at what RPM and what rads.

Between the 2 you listed, the RX is a far superior radiator in all categories with your fan selection.

All fans on radiators are Noctua NF-F12s

Even if we are comparing 240mm RX vs the 360mm GTS?

The case I am looking at is the Define S so I have a few choices for radiator placement.

- 2 Slim 360s (Black Ice GTS)
- 2 medium 360s (tight fit but looks like 2 Coolstream 360mm PEs would fit)
- 1 360mm thick radiator (RX360) and 1 240mm thick radiator(RX240)

What option would be best for me?

yes because ur fans are not what i consider high static catigory...

that belongs to a 38mm thick fan like a san ace, and not a 25mm like your nocunta.

BTW, you can still buy the Gentle Typhoon AP15 fans. Now they are GREAT fans for rads. Have 12 ofr them for my 3 XSPC RX480 V3 rads.

I already owned NF-F12s so I just had to buy 1 more for my radiator setup. I might get the Gentle Typhoons at some point down the line.
