Pastry stouts seem to be the new rage nowadays, seems like everyone is doing them. Pipeworks has like a cinnamon roll stout and other stuff like that too. I'm not a huge fan as a lot of them are too sweet but some are great. Avery has a really damn good double maple stout that I'd recommend. Hubbard's Cave is kind of weird, they're like the stout division of the brewery Une Anee, they only do like sours and Belgian beers under that name though. It's a nice place I've been down there before.Hubbard's Cave - a brewery out of the Chicago subburb-ish area of Niles, IL. They make TONS of heavy-ass stouts of all types - french toast being one of them:

what is the smoothest softest loveliest bourbon a common peasant like myself can buy right now?

Word. I’d imagine a lot of breweries make a French Toast stout
