So my wife and I took our daughter berry picking a few weeks back and we loaded up on fresh strawberries. I took a few pints of them, hulled and cut them and tossed them in some tequila to infuse for a few weeks. The batches finished up last night, so I started the process of straining. The cheesecloth is simple enough, but did you know that it takes literally hours and hours and hours to strain infused liquor through coffee filters? I might have to invest in some jelly bags as a secondary filtration prior to the coffee filters and just pass everything slowly through over the course of the weekend.
Anyway, I also sampled it briefly last night, and it's fucking amazing. It's tequila, but the harshness has been cut down tremendously, and you get the nice bracing freshness of strawberry throughout. It's also bright red; it looks like someone dumped food coloring in it. I figure I'll try it out in some traditional cocktails tonight; a Paloma or a Margarita with natural strawberry flavors? Awesome.
