Because if they call it "christmas break", these groups are making the claim that it supports one religion over their own. (Or rather, imho, the people forcing these changes just want to make themselves feel more powerful.)

But holiday does not imply it is holy. maybe to you, but I get the following holidays off from work, MLK day, veterans day, 4th of July...none of those are holy either.

Exactly. Christmas is two holidays in one:

1. A commercial holiday founded during the Victorian age, co-opting some earlier pagan symbolism. Created to be used as an excuse to show a little love to children in an era when they were expected to be treated as little automatons. It is a holiday of kindness, and a festival celebrating the benefits of the surpluses that can be had in a prosperous industrial society.
2. An austere religious day, also selected because it co-opted pagan traditions, but to celebrate the "birth" of the founder of christianity.

The former is celebrated by department stores, workplaces, and almost every american. The latter is simultaneously celebrated by some christians. A few christians only celebrate the latter and a few non-christians choose to not celebrate the former.

I would argue that, for example, a reform (progressive?) Jew observing Hanukkah is observing #1 and their own religious rite at the same time.

And, naturally, over-zealous Christians seize this opportunity to pretend that they're being persecuted (while still maintaining majority status). I fail to see how calling it Christmas break doesn't support one religion over all others.
