Im gonna be making some spaghetti pretty soon here, and so far all I really have going into it is the sauce, some sausage, and some hamburger.

I was thinkin of puttin some onions in there, or some garlic if I can find some, but im at a loss as too what would taste good.

What kinda spices and things do you put in your spaghetti?

I usually brown some onions with some crushed garlic in olive oil. Then I add some canned diced tomatoes, a can of chopped black olives, and a can of Hunt's spaghetti sauce. Mix it up with some spices like rosemary, oregano, basil, etc.

I also usually make my own meatballs out of ground pork. Season with some pepper and spices from above.

Garth and mjrpes3's suggestions are good. Minus the tomato paste. Eck.

Bologneise sauce, tomato, onion, a little pepper and a tiny blob of butter.

Maybe some meatballs if I feel like reliving my youth.

I prefer pasta with oil & garlic, pesto or clam sauce (or alfredo sauce, for those times when you want your heart to stop beating), but for tomato sauce I generally like a good meat sauce. I just sautee some ground beef, drain, set aside, sautee some olive oil & diced garlic, add a can of tomato paste, sautee more, add a jar of pureed tomatoes (I jar them every summer) and the meat. Simmer for an hour or so, stirring now and then.

My dad used to make the best alfredo in the world. He sauted some onions and garlic. Then took a bounch of half and half or heavy whipping cream i cant remember. Put in on the onions and garlic. Turned the heat down to low. Slowly poured in 2 parmision contains waiting till the cheese was melted all the way then added more. The pasta was to die for. I would lick the plate it was so good.

Only one way. With butter, basil, parmesan cheese, and Tony Chachere's Creole seasoning. No sauce necessary.

In a pan:

- chopped onions (to taste)
- chopped garlic (to taste)
- 1 chopped small carrot (brings some sweetness) and why not chopped celery (adds interesting flavor)
- Olive oil
- dried oregano

Let it melt together, gently. Then rise the temp and add:

- ground meat (I personnaly love meatloaf mix)

Let it brown a little and crush the meat to the size you like (from meatball size to grated). Add diced tomatoes (to taste) and if you like your sauce thicker/stronger in tomato taste , add tomato paste. Add water (1/4 of the tomato volume - re-use the tomato can to do so). Let simmer on low fire for at least 1 hour (the more it simmers, the more taste it will develop).

Just before serving, add salt/pepper/hot stuff (to taste), fresh basil leaves AND 1 cup of the water you cooked the pasta in (it will thicken the sauce and make it smoothier) and bring it to the final boil (2-3 minutes)

Top with Italian Cheese (parmigiano or something similar) and enjoy !

Well, I just cooked the meat (ground beef/italian sausage) and added it to a slow cooking crock pot with some marinara sauce.

Im debating on whether I want to add more sauce or not. Right now, its some really meaty sauce, about the consistency of sloppy joe mix.

Ive got some garlic powder, and some italian seasoning I think I will throw in. I cooked some onions in with the meat.

Ive got some basil too I will put in, along with a little sugar and salt.

Should I add some olive oil in?

It really tastes good, and im really hungry...

Sautee onions with green pepper, mushrooms, and garlic (if you have it), add a can of chopped tomatoes when done, then stir into the sauce and let it simmer for a good 15-20 minutes.. Oregano, sugar, and basil are traditional sauce additives, but if it's premade sauce, just leave it.

I've tried variations with and without, and can't really 'taste' the tomato paste. But I find it does give it a thicker texture, which I like.

WTF? Thinking about Onions and Garlic?? That's a must have, not an option.

Basic sauce requires:

Onion
Bell Pepper(any colour, but non-green is preferable
Meat--preferably Ground, but any type can be used. Sausage is always nice
Garlic cloves crushed or garlic powder
Italian Seasoning(oregano, basil, bay leaf, mint, celery seeds if no Italian Seasoning)
Canned tomatoes--Crushed or whole or Fresh. Do not use Tomato Sauce or Paste(paste can be used I suppose, but Tomatoes work much better)
Carrots
Salt and Pepper

Optional
Mushrooms
Spinach
Store bought Pasta Sauce---great way to start out making your own as it increases your chances of success
Sugar----if your sauce is bitter(too much tomato paste and/or seasoning), sugar is the cure. Just don't over do it

Extras
cheese on top--Parmesan or other, I like Cheddar on top and put in the Microwave to melt.
last few minutes cooking Pasta, throw in some broccoli or spinach(last minute or so)
garlic toast--even just some slices of bread from the toaster with butter/margarine and some garlic powder sprinkled on
glass of wine---sip between bites of pasta, adds a lot to the meal--adding some wine to the sauce is very tasty as well, but don't over do it because the flavour will over power your sauce

Well, I ended up doing most of that including some parmesan on top, except for the carrots and bell pepper, which im not fond of in any food.

It turned out really good. The only thing I did wrong was that I had too much hamburger compared to sausage. If I had my camera, I would definitely take a pic, because this was some meaty spaghetti.

I also have a ton left over. So lunch for tommorow is taken care of.

Just made a big 'ol pot the other day. Going to have to try the mint thing next time... Just a touch in the tomatoes or season the meat? Usually I season the meat with the same seasonings I put in the tomatoes..

Garlic and oragono works good.

Kind of off topic but has anyone tried Tuna with their spaghetti and tomato sauce? I've seen it used once on the food network but have yet to try it.
