What do YOU marinate a steak with overnight before cooking?

nothing... marinating a steak ruins it...
a real steak has nothing but salt, pepper, and accent.. and is meduim rare...

dont marinate overnight. it will make the steak nasty. put it in the marinade about an hour before you eat it. cut slits in the meat in the direction of the grain and away you go.

yeah.

espialy a good expensive steak. if ou want to marinate it then get a cheaper cut of meat.

usually all i do is put a little salt and pepper on them right before i throw it on t he grill

Accccient chinese secret:

For 3-4 cuts of steak, adjust to personal preference:

- 1 tbl spoon Ground Cumin (keep this on the low side regardless of # or your steaks will taste like BO)
- 4-5 Minced Garlic Cloves
- 1 tbl spoon Minced Ginger
- 2 tbl spoon Black Pepper
- 1-2 tbl spoon Salt
- 2 tbl spoon Crushed Red Pepper
- 5-6 oz Soy Sauce
- 3-4 oz Red/White Wine or Beer (optional)

You can adjust the levels to suit your personal tastes, I never actually measure out this stuff... just giving rounded figures. This combination is also great for Chicken, mmmmm mmmmm b!tch! And of course, cook that sh!t on the GRILL!! Charcoal for teh win, propane is fine too. Marinate overnite.

Edit: For the mignon you can just do the garlic, pepper, and soy sauce. Since those cuts taste nice anyways, but try it out with whatever.

actually its pretty good.

1) get tha cast iron skillet
2) heat oven up to 500
3) put some oil and kosher salt on steak
4) heat skillet on stove top so its reallly hot
5) sear each side 30 seconds (or so)
6) throw skillet and all in oven for 2 min and flip for another 2 min
7) let sit for 5 min
8) eat and enjoy


it comes out great. granted not as good as on my webber but still pretty good

It is by far the BEST cooking method for steak that I have eaten. Grilling is good, but nothing taste like a pan seared steak. I get kinda mad for buying a grill sometimes when I think about it. Though YMMV. If you go to any fine dining establishment, ask how the steak is prepared. You may be suprised.

IMO sauces are for masking the taste of a bad steak.

Don't get me started on how my wife uses... *hangs head* Ketchup on steaks... Some steaks that are *really* good (read, the ones I don't make ) she will eat without performance enchancing condiments.

Many of them will use a tool that poke a holes in the meat (not a tenderizer, its called a jkarder (sp?)), which will make the meat more tender. This makes every steak they make have that "melt in the mouth" feeling, if its a good steak. Some family style restraunts will use these to sell cheaper steaks that seem to be just as good as a higher quality cut.

Overnight is flavor overkill. Just marinate for an hour or so before grilling:

Toss your steaks in a bowl or large ziploc, and add few tablespoons of worchestershire sauce, salt, pepper, a few tablespoons of garlic powder (or fresh minced/crushed garlic), and some olive oil. Rub the mixture into the meat and toss it in the fridge.

Never put steak on a cold grill. Let it get nice and hot first, then brush the grill with oil immediately before putting the steak on. Cook hot and fast, try not to flip the meat more than once or twice. Kill any grease fire directly underneath the steak with a bit of beer. Let the meat rest a minute or two before eating. :beer:

Nobody actually uses Jacaards, they just say that to sell useless kitchen gadgets. Poking holes in a steak is just about the worst thing you can do for texture and flavor.

i've had many different marinated steaks and enjoyed them all. one of my favorites is this teriyaki/pineapple marinade....delicious.

i PREFER a steak with just some seasoning (like montreal steak seasoning) before grilling, but i'm not above trying different kinds of steak.
