What do YOU marinate a steak with overnight before cooking?

I rarely marinate with anything. I simply use pepper and salt and maybe a little worchestshire sauce or beer while cooking.

I just bought some of that McCormick Montreal spice sh!t. Do I just rub it on the steak, or do I need to mix it up with something else and paste it on before grilling?

Why do you guys put salt and pepper on your steaks? I assume, since most are Americans, that "pepper" means black pepper.. What's the point? It's not a boiled egg.

just shake some onto the steak and rub it in prior to grilling

In a a zip lock bag - Salt, Pepper, Oreagano, Lemon juice-then toss the lemon in the bag, and Olive Oil.

I don't maranade steak at all..

Best way is to use black pepper and large grained salt just before putting it on the grill, then after cooking it, or at the very end of the cooking, douse it in Olive oil

Let it sit for about 5 minutes after you are done cooking it.

Alright, question for you guys. I do the cast iron skillet method but I always have a big problem with splattering while its searing. Any suggestions (besides saying to cook it outside)? It splatters EVERYWHERE.

Fresh Rosemary
Fresh Thyme
Fresh Garlic
Freshly ground black pepper


Throw it all in a gallon ziplock and you're good.

(More Rosemary than Thyme)

Don't marinate good cuts of beef. Rub a little garlic and some salt and pepper on them about 30 minutes prior to cooking is all that's needed.

dont oil the pan when you sear, oil the meat itself, very lightly. you dont want it fried, you want it seared. the oil should mostly serve to keep it from sticking to the pan.

Yeah, i didn't know what he was talking about at first because there is nothing to spaltter when you're searing.

this method also works wonderfully on bone in port chops - get them cut about 1.25-1.5 inch.

No, that's for chicken or fish. Not beef.

Alright, I guess I've been using too much oil. I once read that I should use olive oil so I've been using that. Putting a little bit in the pan and covering the steak with it as well. Too much, eh? The last time, I tried using butter, but again, I must have used too much.

I'll have to try again with barely any.

Personally, I like to make a small slit in the meat and shove in some peices of crushed garlic. Then, I rub with garlic powder, some seasoned salt, coarse ground black pepper and olive oil.

After that, depending on if I'm grilling or not, but when i'm not, oven at 450, throw in my 12" cast iron. Take it out a couple minutes later, high heat, throw in a little butter, sear each side 20 seconds, shove back in oven for a couple minutes until desired level of doneness (sp?).

I make sure to throw the side of steak with the garlic slits hits the pan first to make sure the holes are closed back up and the juices stay inside.

nothing, just buy quality steaks and you just need to salt and pepper it before cooking. Also I refuse to cook steak for anyone who puts any sort of steak sause on there steak while eating it

i wont eat bottled steak sauces

but pan sauces can make a good, even great steak, truly wonderful. i dont do it all the time, but if ive got some cognac, red wine, cream, mushrooms or shallots...something around that can dress it up, ill throw it in. nothing too strong, and i never douse a steak or other piece of meat with sauce, i just use enough to enhance the flavor.

and since when is a rib eye a quality steak? its not a bad cut but everyone always talks about how there the sh*t. give me a good think New York Strip anyday over any other cut. granted I'll buy ribeyes if the price is right and Newyorks aren't on sale, but they arent the best

They are actually one of the better cuts of meat, short of only a filet in quality. Its basically prime rib.

Ribs you slop sauce on, burgers you slop sauce on. Steaks you leave the f*ck alone.
