Look I don't give a shit if someone likes Olive garden, eat whatever you want. But it's a microwaved perversion of Italian food.
All food doesn't have to be authentic by any means. Plenty of food is great that can be an adaptation, fusion, or just a new creation. But it's certainly not wrong to call out when it's not. Authentic or just good food doesn't have to be cooked by world-class chefs either. Most of it isn't.
It can be cooked by an immigrant in a taco cart, or buy a local non trained chef who bought a little hole in the wall joint. Or someone in the south who's perfected being a pit master just by doing it. So much great food is made by people that have no formal training. That was nonsensical too, squirrel type.
People can eat whatever they like I don't give a shit but it's dumb to say that double carbonara and the shit on a lot of these chain restaurant menus of any kind is authentic anything.
It can still be tasty to you and to me just call it what it is. I don't think that's so difficult.
