Are you talking about deep frying or just cooking in oil. For the latter, I don't think you really need anything very deep. But for the former, a deep fryer is the way to go. You can just put it away after using it and recycle the oil. That lets you use a healthier but more expense type of oil. It looks like a dutch oven at 4" would be better but that thing is like twice the size and weight.
Probably pan frying... maybe an inch of oil to save oil. May attempt deep frying with another inch of oil.

I have a cast iron I fry with myself, 3" more than enough.
Deep fryer is better if your going that route of course, but if trying it with cast iron I would get a Dutch oven.
Most indoor Dutch Ovens aren't even the ones I think of from growing up, those were the old campfire ones you could bury in a campfire with coals on top I guess.
