This weekend we did ginger-soy-citrus tuna steaks on the grill, I took leftover steak and made tuna salad with sliced scallions and wasabi mayo. Had it on toasted sesame buns with sliced avocado, leftover cucumber salad (basically just thinly sliced cucumbers, red onions, rice wine vinegar, a little salt and mirin) and spring mix on it. So good. Like a tuna roll sandwich.
Cubans are great when I have leftover pork roast...
Another easy favorite is to take leftover steak, cut it up into bite-sized bits, mix with lettuce, tomato, red onion and shredded cheddar, some mayo and hot sauce and stuff into a toasted pita.
Speaking of steak, also like to take leftover steak, slice it thin, put it on a good roll, cover in fresh mozzarella and put it under the broiler for a minute til cheese is bubbly. Top with sliced tomato, serve openfaced. Maybe some gravy on top if I have some on hand (good user for leftover roast).
ooh, or the unbelievably bad for you grouper reuben. Same thing as a regular reuben, but instead of pastrami, fried grouper. mmm...
Probably my favorite though is a nice, fresh half oyster-half shrimp poboy. Dressed. Oh god, I'm drooling just thinking about it. Ah, or a debris poboy from Mother's. Or a Ferdi.
Dammit, I'm hungry.
