What kind of cooking range is better? Gas or electric?

..I have a Vulcan commerical gas range in my kitchen. No doubt expensive but a great value if you like to cook. And there's nothing more impressive then the ponderous mass of a stove built like a battleship.

No...well sometime yes. I assume he's talking about the cermaic cook tops. Once you load load up the pan or ask it to deliver heat it can be very difficult.

Just boil a gallon or two of water on one.

Then I believe you are mistaking radiant cooking for induction cooking. Induction cooking works by exciting (i.e. heating) ferromagnetic alloys via a changing magnetic field. Efficiency can be in the 90% range and power is high enough such that in terms of speed, induction dwarfs both gas and electric (coil or radiant).

I own a 1950S era Monarch gas range that simmers real nice, so when I went for a new range for my second home I looked all over for one that did indeed simmer and that is what I bought...damn nice simmer

I love the quick temperature adjustment of my gas cooktop. But, it does not boil water as fast as I was expecting coming from non smooth electric. Maybe I was expecting too much...

After a lot of research last year, I'm pretty sure that this is the best possible option. There are quite a few choices for dual fuel. I went along with an oven like this one
I'm not sure if that's the exact model I got; if it isn't, it's very close.

I tried to make ghetto Korean BBQ on my gas stove. It didn't turn out as well as it did on my electric stove. I had a ring of slightly charred meat while the rest was not burned like korean bbq should be... hahaha but seriously.. I should've just gone with a grill.

Gas FTW. I can't think of any other situation where gas would lose.

go with electric, it is safer for those who can't cook. If your friend can cook, he/she wouldn't be asking this question. Do you know any restaurant that use electric stove? hell no.

I'm a fan of gas, but there are some nice high end electric ranges out there that I wouldn't mind having.

If you ever need to blow your house up and make it look like an accident, you'll appreciate having a gas stove.

IME the only thing an electric stove does better then gas is boil water for pasta or soup a bit faster, otherwise the instant tempeture control provided by gas stoves is vastly superior & in fact you'll never see any serious cook using electric by choice.

Electric oven for baking for steadier sustained tempeture ... convection speeds things up but isn't required & can dry food out if you arn't careful.

Gas for broiler duty ... the open flame just does a much better job of searing steaks etc.

Electric, best would be induction

The only advantage of gas is the faster control times. Otherwise gas is just a waste - most of the heat goes (in the form of hot air) around the pan heating the surroundings. Our new flat has gas And I badly want my Ceran back. Ohn and gas stoves are a pita to clean...

Electric is just fine. I can't remember the last time I needed to change cooking temperatures more than once per dish. Especially with nice tri-ply stainless pans you're going to get lots of heat retention.

Quicker boiling water and easier cleaning also favor electric. But, still, we're talking about fractional differences, so whatever.

Gas is the best. The only problem is the heat control nobs i have give about 1/4 inch of slack before it changes the gas ammount making simmering hard.
