just curious if people here are saving the bacon grease when they cook bacon?

I do because it comes in handy for other recipes.

Absolutely!

1. Line a rimmed baking sheet with aluminum foil & place a cooling rack on top
2. Line (but don't overlap) bacon from end to end and cook from a cold oven at 350F for 40 minutes (add more time as needed)
3. Remove the bacon with tongs & flip onto folded paper towels
4. Pour bacon grease into a mason jar, using a sieve to strain it

Not only will it amp up your chili, but you can make the most amazing carnitas with it:

Breakfast this morning: fried rice with crispy potato hash brown. I suck at drawing smiling face.



Lunch: Stuffed crust pizza. Topped with potato wedges, ham, onions, corn, and mozzarella cheese. So many people just make plain boring pizza at home when you can experiment and have fun. The homemade potato corn pizza was awesome! Should try it.

Tonight will be another Instant Pot meatloaf.

This is the only way I make meatloaf now. So easy and so delicious.

Breakfast this morning: thin bacon, Kiolbassa smoked beef sausage, 2 fried eggs, toasted seaweed, and short grain white rice cooked on stovetop pressure cooker.



Most of the time, I'm lazy and just make rice on our Zojirushi rice cooker. But occasionally, my wife or I will use the stovetop pressure cooker to make rice if we're in a real hurry or if we have lot of time and want to make scorched rice soup. For people not familiar with scorched or burnt rice, this sort of explains it.

Rice cooked on stovetop pressure cooker tastes better than rice cooked on regular rice cooker. The rice is chewier and just tastes better. And no, Instant Pot doesn't give the same texture and taste as the stovetop pressure cooker. I also own 8 quart IP and have made rice using it. Maybe I'm not an IP pro but stovetop pressure cooker is still the best.

For me burnt/scorched rice is the best part of the meal. Burnt rice cooked further on the stove with water added to give that awesome burnt nutty rice soup.



And I love eating it with some kimchi. It just soothes my stomach and makes me happy.


And I pour the leftover hot rice liquid from the pot into a cup and drink it like hot rice tea. It's so nice to drink on wet chilly morning.

I am on a super tight budget so no container. I just use 2 sheets of foil in a cross pattern with a 2lb or so meatloaf in the centre. Pull up the sides a bit and it fits perfectly in the 6qt pot with the trivet inserted. Don't need to cover the loaf. Put the lid on and set to high pressure for 35 mins. 5 min natural release and then remove the lid and carefully remove the loaf in foil. let sit 5 mins or so and transfer it to a plate to carve it up. Unless you want to carve it up in the foil.

I vary the recipe based on what I am in the mood for. Tonight I am feeling Italian so I will use 1 egg and some seasoned bread crumbs, onions & yellow pepper and some garlic, Italian spices, seasoned salt, pepper and to kick it up a notch I will use some dried birds eye peppers for heat. Just for fun I will add some Chinese 5 spice.

1 cup Quaker oats.
i frozen banana
3 squares frozen 85% dark chocolate
1 TBSP filtered honey
1 TBSP all natural peanut butter

Cook oats in microwave for 1-2m
Cut up frozen banana in little pieces
Cut up frozen chocolate into little pieces
Take out oats while it's piping hot
Put in frozen banana/choco into bowl of HOT oats
Put in peanut butter
Drizzle on honey
Stir if your like, or just start eating. So delish!!

We’ve recently gotten into making fresh loaves of bread. I have pictures of some of our creations (the most recent is a type of bread from Israel but the name escapes me) and if I can figure out how to upload pictures to here I’ll show you guys.

There should be picture icon you can click to upload the your picture inside the message box. Or you can also create an Imgur account and upload your pictures there and link it here in the message. I use Imgur.

meatloaf pics:







I used 3 dried birds eye peppers and the heat is just where I like it. This meatloaf is very good.

One day I will make a bigger meatloaf but this size is fine for me.

I made toast this morning. It was quite good. I think I reached 15% butter by mass.

You must own a toaster. Because it's impossible to make toast without it.
The problem with toasters is that the butter slides off the bread and forms a puddle on the counter. I sliced a baguette and toasted it in an iron skillet with butter. Mmm, butter.

Perhaps you could teach @BarkingGhostar how to make toast without toaster. Because he seems pretty clueless that's even possible.
