I'd pick either the first Godfather w/the toll booth scene shootout, or Gauntlet which someone already mentioned, or perhaps the ending scene of True Romance.
so good... that movie got underated in my opinion. I thought it was real good, yeah it could have been better with all the big names it had, but it was still great
other than that the Matrix was still AWESOME shootout oh yeah and Tombstone
Speaking of true old west style "shoot outs" John Wayne & Clint Eastwood had several of the best IMHO.......True Grit, The Shootist, Outlaw Jose Wales, etc., etc..............
Eastwood has had a lot of great ones in both his westerns and also the Dirty Harry movies. But the one that I like a LOT is in Robocop when Robo breaks up the drug deal and blows away like 20 guys.
John Woo's chinese film, "A Better Tomorrow". It's what made cha-yun-fat a star. I forget if it's the "better tomorrow 1" or "better tomorrow 2", but both are awesome movies.
Bank shootout scene in Heat is also awesome, i agree.
Face/Off - just about every scene was kewl
Swordfish - the first scene, and the scene with Hally Berry *wink wink*
Terminator 2 - the scene with him and the gatlin gun.
Tombstone - the movie with Val Kilmer and Russel [something]
The funniest shoot-out scene:
the scene with Leonardo di Caprio running away like a little b!tch
