You have a good SLI board, but you didn't mention your PSU. If it's good enough, in my opinion, you should go with the 2 GTs (if your budget can handle $600).
My reasons are:
1) You will get higher frame rates at 1280x1024 (the resolution your stuck at with the LCD). See
here for better peformance across the board at 12x10.
2) Playing at 1280x1024 won't hurt you when it comes to using 256mb cards (see
here). You're not likely to see ANY stuttering at that resolution regardless of memory amount.
3) If you plan to upgrade to the next gen cards in ~6 months, you'll have decent resale value on these GTs. i.e. Buy these 2 for $600, sell them later for $400 easily, and then likely buy a new next-gen high-end card with very little (or even no) money out-of-pocket. If you buy GTX now at $500, it will be difficult to get $400 (more like $350) for it in 6 months, causing you to have to spend more out-of-pocket to upgrade later. In the end, you'll end up only spending $50 more or so than the buyer who gets a GTX and upgrades, but be able to enjoy faster frames for the next 6 months. It's worth $50 to me anyway.
4) My last reason, I promise. You didn't include the XT in your poll. I can't recommend the GTX over the XT right now. And, with the price difference being very good on that OEM XT at Newegg right now, I'd grab that over both the GTs and GTX. So, with no XT in your poll, if you're going to spend more than what an XT costs, might as well get something that actually performs a lot better.
