So what kind of system would you need to fully flex the muscles of the 8800 GTX?

8800 GTS 640 MB?

I'm talking in terms of how much RAM, and how fast of a processor? I'm talking in terms least amount of speed and RAM needed.

How about 4 gigs of RAM and non-OC'd e6300?

It all depends on if you are talking single or dual card. for a 8800GTX it will take as faster processor as you can give it, with it coming increasing performance. A single GTX a E6600 would be nice, and overclocking it would be better than a E6300 in the long run. It has more cache than the E6300 anyway.

Ram is not such a factor but any modern system should have 2GB ram ddr2 anything as fast or faster than 533mhz.

With the introduction in the near future of direct x 10 the cpu should become less of a limiting factor as the GPU hasn't got to be feed so much from the CPU, everything is more efficient more work is sent directly to the GPU.

And you should get a nvidia chipset motherboard there is a perfomance boost from the n6xx series boards with the 8800 series cards. 680i board will offer you Sli for future expansion on to full PCI-E x16 lanes

I thought SLI makes each slot x8 or x4. Is that expected to change in the future?

Depends on the chipset and the manufacturer of the board. Example, the P5N32-E SLI from ASUS has 2x16 PCI-express slots and 1x8 PCI-express slot. Shown Here
