always add some fresh herbs to the main course. a twig of this here and a leaf of that there. always makes it seem more fanciful.

instead of serving plain lettuce, get a fancier mixed bag so you dont have to chop, but it adds more visual appeal. throw on croutons, bacon bits, eggs, sliced mushrooms, tomatoes, etc

finally, the piece de resistance... MAKE YOUR OWN SAUCE. its easy. all sauces are a variation of a reduction of butter, broth , wine/vinegar. if you cook salmon on stove top and have salmon fond left on the pan, put some butter on it to work the sticky fond off the plate. throw some shallots on there and let it sweat. then add some white wine and let that thicken/reduce in half volume. if you want to throw some fish or chicken stock on there let that reduce also. finally add a bit more butter for that nice body. drain the sauce and top the salmon

damn that is clutch info.

Plating- very VERY good call. I'll keep that in mind.

Whatever you do, don't jump in the air during dinner.
The force from the Earth's rotation will throw you out of orbit!

WOW so funny! Dig up OP's threads and then make a witty reference to it! Never heard of THAT before!

i'd stay away from the asparagus because even if your date goes for a little tinkle you're going to walk in there afterwards thinking she dropped a huge deuce! asparagus pee smell FTL

I was thinking about it, not sure how big of a chicken fan she is, but here is an idea in which you can take in many directions.

Chicken breast fillets kinda look like half of a heart, so you could put it on spaghetti or whatever, lay the two halves side by side (cooked however) and garnish around the edges in parsley... I think that would make a very romantic main dish.

now, I know two chicken breasts might be alot for one person, so you might just have to share the plate ( ), a wonderful setup for lots of giggles

just a few ideas...

good call. this one has nice green color and tastes good.

salmon with asian-influenced sauce

salmon with honey-balsamic glaze (not as big of a fan of this, but if you dont have ingredients for above)
http://www.foodnetwork.com/foo...OOD_9936_30234,00.html

salmon with egg sauce - i prefer this the most. its way easier to make than the recipe seems, and some of the ingredients are optional/substitutable

Hmmm....this is exotic but I think you can find the right ingredients.

How does squid with crabmeat stuffing sound? My own personal recipe...
Combine it with a Ceviche first course, or...

Here is an appetizer recipe that comes with a video, and it still has crab...
Crab Towers!

Basically, whatever you come up with, you need to remember three Home dinner rules:
1) You have time! Decide what you want to make and see how much you can prepare one to two days ahead of February 14. Trust me, the more you prep, the easier it will be on you. An added bonus is if you can have everything prepped (mise en place) before she gets there, you can treat her to a cooking demonstration.
2) Hate to get too personal here but stay away from apsaragus if you two...well, you know. However, if you two love garlic, then more is fun.
3) Several light dishes than one big heavy one leads to a better evening after dinner (no food coma)

Unfortunately...I need more data...

Does she have any food allergies?
Does she like savory more than sweet?
Is she a vegetarian?
Does she like any regional cuisine more than another? (North, South, Southwest, Asian, French, Indian, etc.)
Any food that she definitely does not like?
Both of you old enough to legally drink?

no allergies

she likes both

no, she loves everything

she loves asian and korean food but frankly we eat those often and wanna try something fancy. she's not a big fan of italian for some reason (_I_ love italian).

mexican and italian she doesn't care for

yes.

Crab cake really sounds good..

I've got my work cut out for me this year. Last year, I bought a wok and spent hours cooking dinner for valentine's day, something like 9 courses.

Just remember, super-high heat is your friend. Nothing like a faceful of oil smoke...
