Mashing some Turnip and mixing it in is good too. Dill also adds some yummy to it.
Another suggestion, just salt/pepper it, then use it as a bed for he rest of the meal. Fry up a steak/pork chop(ground beef, stew beef, or even chicken also works), add some onions and peppers and dump it all including the juice ontop of the potatoes. Adding a sauce into the cooking meat will give extra juice and end up like a gravy when it mixes in with the other juices. I used to do this a lot with potatoes and rice, very easy and tasty.
