My wife and are buying bulk beef next month. It's an organically raised cow. Kill weight is 900lbs, hanging weight is 600. 1/3 of that is lost during the butchering process. Nope, this did not occur online at all. Most cattle ranchers are good ol' boys and wouldn't know what to do with a computer.

The reason for posting it was to provide a reference point for buying bulk online vs. straight from a rancher. Most of what you can buy online in bulk is coming through wholesalers who purchase the cattle from various ranches, process the beef, and keep it in large freezers until shipment. Quality will vary since they are using various ranch stocks. One of the few exceptions to that rule is Big Sky Ranch.

Whole, half, and quarter bulk beef packages can be ordered as well as special package configurations that they have.

If someone wants a larger quantity of a specific cut than what a grocery store normally sells then their best bet it to go to their store or butcher shop of choice, make friends with the butcher, and arrange a special order of that cut. If people want to order from a place like Big Sky then you should probably try one of their affordable packages first to make sure that the quality of the beef meets your expectations before dropping a bundle on a 1/4 or larger bulk beef purchase.

It's not an answer until it's confirmed and official. Who will step up to the plate with an order to find out if the site is legit? Who will rescue us from this thread?

I have just sent them the following email:

I'm sure you will be pleased to know that people are hearing about your site through word of mouth, but here is where it gets interesting; Your site has been selected as the answer to a long standing question, posed at one of the worlds largest internet forums, regarding bulk beef procurement.

The thread in question, titled "What's a good online source for buying bulk beef? (Like 10lbs.)" has been in progress with little to no progress for over a year and a half. Only when your site was linked, by a loyal customer, was the mission considered complete. However, in course of this quest, some questions were raised regarding bulk beef and its supply. Could you please answer the following for our faithful members?

1) It has been discussed that 10lbs is not bulk. Can you confirm this and help us with your definition of 'Bulk beef'?

2) Many members have requested, rather than weight, certain size cuts of beef. Can you confirm if you supply cuts that are approximately the size of 1-An alternator(F250 or similar), 2 - A radiator (Civic sedan or similar)

but if you want a lot of meat just notify Topps. they have somethinglike 28million pounds i am sure they will sell ya cheap!

Although I didn't get the bulk beef online this time but I figured I'd post about it here anyway rather than start a new thread (pics are below).

I drove to Plant city this morning along with my neighbor to pick up our order from the Hoof-n-Horn slaughterhouse. We ordered half of a steer (about 2 years old, because apparently beef is a lot like women in that the younger ones are more tender) that had been slaughtered for us about two weeks ago and was butchered last weekend. After finally finding the place we pulled up to the slaughterhouse. It was a family run operation and 3 generations lived on about 50 acres of land where the slaughterhouse was also located. It was a nice little spread of land they had. The slaughterhouse itself was very clean but you could tell it had been around for a while.

After we met what seemed like the entire family they opened the walk-in freezer and brought out our order. We filled 6 full-size coolers and took off back to Orlando. Back home I put a tarp on the garage floor and seperated all the beef according to cut.

Here's a pic of the beef laid out:

Bulk Beef

Once we had each divided up our share I put the beef in the Freezerator, kept out a few cuts that I plan on using soon, and put them in Seal-a-meal bags. Here's a pic of those:

5 Cuts

The 5 cuts above, in clockwise order starting from top left are:

1) Porterhouse

2) Boneless Ribeye

3) T-Bones

4) Short Ribs

5) Brisket

The Porterhouse is thawing out for tomorow night. Since there was only one rib roast my neighbor took that and I took both Porterhouses and an extra pair of T-Bones. Everything else split up pretty evenly. I'm not sure what I'm going to do with all the hamburger though. There were thirty 2 lb packages for each of us. Looks like family and friends are going to have some hamburger given to them.

So there you are. Bulk beef.
