A little local joint with decent entrees and exceptional appetizers. I may just go for a Coke & pretzel and then eat some dessert at 7-11.

Made a full pan of lasagna on the 13th...still eating today!

1.5 pounds of ground beef
1 jar of spag. sauce.
1 small can of tomato sauce
parsley flakes
1 - 15 oz. bowl of Ricotta cheese
2 - 8 oz. bags of shredded Italian style cheese (5 types).
1 - box of lasagna noodles
2 - eggs
4 oz. medium salsa
1 - container of Parmesan cheese

Cook beef in boiling water until finely cooked (at least one hour on medium heat in 4 quart pot). Drain water (and removed fat). Add jar of spag. sauce, 1 small can of tomato sauce, 1 small can of water, Mrs. Dash, and salsa. Cook over medium heat about 15 minutes.

While cooking the sauce, place noodles in pan of warm water to soften.

Mix Ricotta cheese, one bag of Italian cheese, 2 eggs, about two tablespoons of Parmesan cheese and small amount of parsley flakes into bowl and mix well.

Spread layer of cooked sauce on bottom of pan. Place 3.5 lasagna noodles over sauce. Spread cheese mixture over noodles. Cover with more of the sauce. repeat about 4 times. Pour remaining sauce on top of top noodles. Cover entirely with remaining bag (8 oz.) of Italian cheese and then add a sprinkle of Parmesan.

Bake in 325 degree oven for 50 minutes covered in foil and then another 15 minutes (to brown) uncovered at that same temperature.

Serve with garlic bread....yummy!!!

Damnit, I've got to do something with my time off (forced 25 days off at work)!
