what's the difference between....

ceramic and metal film resistors (besides the obvious). i am trying to build a CMOY audio amp and the parts specify metal film while all i can find in the lab are ceramic

Metal are usually more precise with better tolerances. The "sound" can be influenced by all sorts of factors - some carbon sound better than metal in the feedback loop of some inverting amplifier appications for example. Metal are usually more "neutral" and generally used for small op amps like the CMOY. Using another type shouldn't hurt.
