uh...

well, im thinking now what constitutes "sauce".

I really like Lao Gan Ma and Fu Chi, but they are thick and have a very dominant flavour, that i would hesitate to call sauce. It's like, when you eat Fu Chi and dumplings, the Fu Chi is the main flavour, the dumplings are the sauce. Sort of. you know what i mean.

Sriracha is good for everything where the garlic taste doesn't clash.
Encona classic is great for chicken.
I love Jufran Hot Banana Sauce for chicken and for chips as well. Doesnt really go well with beef or pork.

I would say Fu Chi for pork, Lao Gan Ma for beef, and Encona for chicken.

Not sure substituting lactic acid for acetic acid is a huge distinction flavorwise.
Fermented Fruits and Veggies are very common Worldwide among many cultures. It is one of the oldest methods of preserving food.

say, if you add ketchup to french fries, they still taste like french fries, right?
if you add tabasco to chicken, it will still taste like chicken, ye?

Actually if you put ketchup on french fries the sauce will overpowering enough to smother the fried potato taste. But Tabasco will only enhance the flavor of the chicken. Winch is why you don't put Goddamned ketchup on anything at all.

Texas Pete also makes their own Wing sauce (not sure if you meant that one specifically) and I agree--it's better than Franks. The Wing sauce is hotter than their normal recipe, if anyone would be concerned about that, heh.
I was talking about just mixing it with butter in the classic way, before tossing.

There are jarred wing sauces that are basically canned butter + sauce (which always weirded me out). The advantage of doing it yourself is that you can adjust the heat by adding more sauce.

I started grilling wings a few years back. If you've never tried it, here's what you do....buy some fresh wings. I suggest whole ones by the lb. You can take some kitchen shears and cut them into drums the typical pieces and trim off the tips. Open a beer and begin to drink it. You can sprinkle a rub on them if you like. I sometimes hit them with seasoning salt or cayenne pepper. Grill them on medium heat for about 20 minutes, drinking more beer as you man the grill and watch for flames....the skin can drip fat and cause fires...you don't want the wings turning black from smoke/char.... Remember....bone-in chicken takes longer to cook, even when you're talking wings.

You can serve them with the dry rub/seasoning *naked*. This is diet-friendly when I'm trying to cut weight as they're only 35 calories each.....or drop them in a bowl with a lid and toss them in fat. When I'm lazy, I don't make my own sauces and just buy pre-made wing sauces to toss them in. Garlic Parmesan and Caribbean Jerk sauces are my favorite to accompany HEAT. I like to alternate between spicy.....really spicy....and those milder sauces....or no sauce. Just depends what kind of wing party I'm throwing. A good light beer is what I typically pair with these....especially if it's warm enough to enjoy them outside.

I agree most of the sauces listed so far are just red colored water...
Melinda`s Naga Jolokia sauce! Just as hot and tasty as el Yucateco!!

I'd like to try that Melinda`s Naga Jolokia sauce, but it is 12bucks at amz. Worth it?

Around here Tropical Pepper Co(A big favorite of mine) has a fairly easily attainable ghost pepper sauce for ~$4 tops. It's Costa Rican made like Melindas, and their habanero sauces are very similar, though I think I'd give the nod to Melindas for flavor. Melindas is harder to get here, so I don't have it as often.

Anyway, it might be similar enough to Melindas at a significant savings if you can find it, but I haven't had Melindas ghost chili sauce to compare.

I like Tabasco Scorpion Pepper sauce. Yum.
I'll have to keep my eyes open for that. Might have to buy online.

edit:
Might just buy it from them. I was checking out their site, and they have some neat stuff. I might get my daughter a swamp fairy and some personalized Tabasco for her birthday, and I can get myself some of the more unusual sauces they have...

Habanero, green, chipotle, and garlic are pretty common here. Haven't seen the others. I only get the original and habanero. The original is about as mild as I want to go with hot sauce.

I've only seen the more exotic flavors online at the Tabasco store. That's where I got my Scorpion Pepper Tabasco.

Probably depends on your locality, there are a couple stores here that have dozens of hot sauces (maybe more, honestly).
