I've been using Everest since the early days when it was called Aida32. Many things have changed since then but Everest continues Aida's legacy as a great program, especially for testing mem performance. Unfortunately as most programs out there it's not perfect. I've also found it to be inaccurate on some occasions, mostly with frequencies and voltages. What happens normally is that Lavalys will come up with a new ver that corrects this problems but as soon as a new chipset, GPU or sensor chip comes out it's the same problems all over again.
GPU-Z on the other hand is a new program and some things like multi-GPU setups may not be reported correctly yet. Still it's quite accurate with current graphics boards and it has already had a few updates that have improved it and also added some new features. Latest release is ver 0.1.3 Dec 6 2007 !
There is no answer as to what program is right or wrong. What happens is that all these programs excel in some fields and fail miserably in others. That's why we have to use many of them in order to know how different devices/subsystems perform.
