I highly disagree here. I had an SD800 IS and it felt gianormous, and I had an SD200 before it (roughly the same as the SD1000 dimensionally). It borders uncomfortable to pocket because of the weight. But then again, this is highly subjective.
With that said, you can't go wrong w/ either camera. I sold my SD800 mainly because it was an impulse buy since my SD200 broke... but then got a 20D upgrade.. so needed the cash. It's a very nice camera, altho a tad disappointing at iso200+ for me.
I found IS is not for me unless I have full manual controls, which was another reason for selling it. I felt the slow sync mode+flash to be too slow, even with the assist of IS, which is why I wanted IS. I'll pick up an SD1000 in the future, when it hits 125
If you can don't mind the weight, and aren't as picky about manual controls+IS like me, get the SD800. If portability is your primary concern (as in, you don't have a bag to carry around or a willing wife/gf), get the SD1000.
