I will tell you what I do to my steaks.
I season the steak with garlic salt, pepper, Montreal steak seasoning, Adolph's Meat Tenderizer.
Then I let it sit out to room temperature after the spices are applied.
I use a gas grill, I take mesquite wood and soak it for hours and when it is done soaking, I place it in a foil pouch and put it in the bottom of the grill, I let the smoke start going before placing the steak on the grill.
I sear the steak on high both sides, then I crank up the heat to get the smoke rolling, then I place the steak on the top rack high heat until its finished.
When the steak is almost done, I place a very large sauteed portabello mushroom on top. Then I place a piece of blue cheese or mozzarella top until melted.
