Who makes the best BBQ?

So? How about it? What style of BBQ is best?

They are all proper in their own right. Correct my definitions if I'm wrong if you would please.

carolina - fruit woods used with spicy rub. Slaw/sauce is vinegar based.
memphis - combo of sweet/tart woods, mild rub and a bland slaw, sauce starts to add the cursed ketchup.
St. Louis - sweet stuff via sauce and not the smoking...hickory, sauce is basically a ketchup
texas - straight hickort, very sweet sauce, sweet slaw (worse BBQ ever)
kansas city added

For Ribs, I suggest a mix between Memphis Dry and Carolina's Sweet BBQ. I never could get into the whole Missouri or Texas Vinegar or Mequite stuff...

I'm from TN...grew up near one of the best BBQ places in the country. Pulled Pork BBQ or thinnly sliced pork is the best.

Carolina BBQ is the style used in most of the South and my all time fav. ribs are from dreamland BBQ in Alabama

...but TX brisket is the best

They're all potentially great and all potentially awful depending on how they're done. It all depends on the specific wood, sauce and rub.

Living in Eastern NC I'm partial to our style (pulled pork with vinegar sauce). For ribs I do like a spicy dry rub with some red sauce on the side for dipping.

BBQ = slow cooked pork. Sure, I'm biased as well.


But yes. TX does have the best brisket. I can't deny that BBQ to me means pork ribs, shoulder, whole pig. i will be making it to memphis in may this year.

Yeah, I am from Charlotte but I definitely prefer pulled pork with a spicy/hot vinegar sauce.

The very definition of Carolina BBQ. Good man. I left out the "chopped vs. pulled" for a reason.

I smoked 20 pounds of pork shoulder for the super bowl....it's kind of a seasonal event. Leftovers were distributed between two work places in KY. They had never tasted anything like it, and they LOVED it.

Who needs sauce? Some fine folks in Lockhart TX have been serving up some fine BBQ without sauce for the last hundred years.

Chopped/sliced brisket owns pulled pork. Sorry, but most outside the east coast dont eat pulled pork.

Not always pork ribs > beef ribs.

A pork loin every now and then is good too.

You can take that chewy, mesquite, gnarly, rob the flavor of beef crap and go home.

Most west of the mississippi don't even know what BBQ is. Save for tx and st. louis. But they don't generally count because they suck so much.

You obviously havent had good BBQ from Texas then. Good Texas BBQ isnt chewy. Not only that most sauces used arent super sweet, most places I got have a mildly sweet twang, with a spicy kick added in and they have runnier consitency not a pastey ketchup consitency. Not only that sauces are typically served on the side.

See in Texas we dont limit ourselves to pork, we BBQ everything. And no I dont mean grilling, I mean BBQing.
And when it comes to ribs, the vast majority use dry rubs, not sauces.

I've had texas bbq in texas and loved it, there is also a little texas style bbq place in my area that is really good. My parents moved to North Carolina, and visiting them a few times recently I ate bbq there and enjoyed it as well, so it's hard for me to pick. I'll be moving to NC in June, so I'm sure that will eventually become my favorite though.
