1. Cooper's BBQ Llano,TX
2. Black's BBQ Lockhart, TX
3. Stubb's BBQ Austin, TX
4. Southside Market Elgin,TX

Throw some San Antonio stuff my way and I'll be glad to visit them.

But man! Why all the hickory?

Sorry never went to SA enough to know where anything good was.
If you are ever on the south side of Houston try Ryan's Smokehouse , tiny little place and kinda hard to find but awesome bbq, my favorite thing there was the loaded baked potato.... mmmmm....
That is the thing I miss most about Texas, there is only one OK BBQ place I have found here, and their brisket tends to be dry.
Ryan's is so close to me! Webster is about 20 minutes away so I should find that place and give it a try.

Its almost at the corner of Nasa Rd 1 and Highway 3. Easiest way to get there is take Hwy 3 south from Bay Area Blvd and take a right on Henrietta, its the last street before you get to Nasa Rd 1.
The brisket is awesome, sausage is good. Get the loaded Baked potato, you won't regret it. (Though your cholesterol level might.)
When I'm in that area, I'm usually on Nasa Rd 1 traveling south. I know the intersection you're talking about (it's a bitch in traffic).

According to Google maps traveling my normal route, I'd have to turn right onto Hwy 3 and almost immediately turn left on Henrietta. Does that sound right? After I turn, is it on the left or right side?

IIRC there should be a turn lane cut into the island to turn onto Henrietta, but it is a biatch to pull off especially in traffic. An easier way would be when headed back towards I-45 on Nasa Rd 1 take the first street after the club on the corner there. Should be Houston st, Ryan's is on the corner of it and Henrietta.

Gotcha. I'm on vacation next week and sounds like it will be perfect to go to for lunch. Thank you very much for the recommendation. Such a small world sometimes.

The pig is the perfect creature.

Do cows have bacon? No.
Do cows have ribs as good as a baby back? No.
Does sausage come from cows? No.
Does brisket taste as good as Boston butt? No.

When it comes to BBQ, it's all about the piggy.

Brisket and chicken are for people that can't appreciate real 'Q.

I did 3 racks of b-backs on Sunday in sub zero temps. 6 hours of slow cooking goodness resulting in lip smacking, finger licking, tender juicy ribalicious heaven.

I don't get too caught up in styles/regions. I tend to do a Carlolina rub, but I like the more KC style sauce. I'm not fond of vinegar based sauces.

I use apple almost exclusively when I smoke. Rubs are home made and go heavy on the turbinado sugar, sea salt, and Hatch red pepper.

The scary part is I haven't been there in more than a year and I still remember how to get there.

I love Ryan's Smokehouse Good BBQ.

Another great one is Thelma's BBQ just east of downtown. Don't get there too late though, they will sell out

Aw damn. Thanks for another reco. Ryan's is closer for me but Thelma's isn't that much further either really. Will have to check out Thelma's some time as well.

Your description of Texas BBQ is not consistent with my encounters. It is not too sweet. Good brisket is cut with a fork, not a knife and doesn't need sauce. Actually all good BBQ doesn't need sauce, but sauce can enhance it. My favorites:

Joel's BBQ in Flatonia
Billy Bob's Backyard BBQ in Hondo

I also really like this place North of Oklahoma City called Oklahoma's Best BBQ.

Is Ryan's that place that's really small and just an extension to a meat market? If so I like that place too.

Chopped/sliced brisket owns pulled pork. Sorry, but most outside the east coast dont eat pulled pork.

You're missing out big time.

BBQ = pork.

You can take that chewy, mesquite, gnarly, rob the flavor of beef crap and go home.

-edit-
Most west of the mississippi don't even know what BBQ is. Save for tx and st. louis. But they don't generally count because they suck so much.

4 Places you need to visit that would change your mind

2. Black's BBQ Lockhart, TX
3. Stubb's BBQ Austin, TX
4. Southside Market Elgin,TX

Your list lacks Salt Lick

BBQ = pork, it's that simple.

Texax brisket, yep it can be good, but it ain't bbq, its beef

Carolian BBQ - Western, but that what I grew up on.

When in Memphis, I always get my Memphis dry ribs at Corkeys. When in Lexington NC, I dig into a plate full of pulled pork.

It just has to be PORK

I also smoke my own, ribs, pork shoulder or butt, and I'll even do a brisket, even though it ain't BBQ, but it is good.

I vote for pork, pork ribs-California style.
QF laughing. This is the sh**.

http://www.eandjbbq.com/index_everettandjones_main.html

Greg Johnson and Vince Staten, in their valuable 1988 guide to the nation's best barbeque joints and sauces, titled Real Barbecue, declare that Everett and Jones sauce is the best in medium and hot varieties. they write, "The sauce is very sweet, almost fruity and very smoky, with a persistent perspiration factor that builds with each bite.

:thumbsup::thumbsup::thumbsup: (that's right 3 thumbs up)

lockhart is around austin, and those places are better than the salt lick.

county line is better than the salt lick too.

the problem with the salt lick is that the second plate always blows.
