Yep my parents have a tent every year. See the results for the "Smokin Spiders". Not too bad for a bunch of amateurs.

I still say the Commissary has some of the best BBQ in Memphis. Only reason I will visit Memphis.

Dreamland BBQ in Tuscaloosa, AL. Those ribs can be freaking addicting.

The chains in different cities that have come out are alright but nothing can beat the original Dreamland BBQ shack.

Isn't anything with BBQ sauce, called BBQ. I mean if I grill pork chops and lather it in BBQ sauce, that is BBQ right.

No. REAL BBQ is the process of slowcooking meat for hours over charcoal and smokewood in a low, controlled heat.

Grilling and slathering in BBQ sauce is simply grilling and slathering with BBQ sauce.

The last time I did pork shoulder it was a 16 HOUR cook.

As for Carolina, I take offense, there is no such place. South Carolina uses some dry, mustard-based crap. And when talking about North Carolina (The ONLY place that matters for BBQ ), you must distinguish between eastern NC and Western NC. East is the vinegar-based stuff, west is more thick, sause-based. All of it chopped, of course; b/c it shouldn't come any other way?

What the hell is Carolina? It's a football team and a hockey team, but not a place. poll needs updating.

Most west of the mississippi don't even know what BBQ is. Save for tx and st. louis. But they don't generally count because they suck so much.

agreed. in the midwest they call BBQ the device that cooks hotdogs, hamburgers, brats, whatever. BBQ is not a grill, and it is not cooking said hamburgers, hotdogs on that grill; it's a specific method of cooking Pork--and it is the result of that cooking.

Thelmas kicks some major ass ! Go early, prepare to wait in a long line and keep your mouth shut. That woman will bitch-slap your happy ass right out the door if you complain about the wait or a screwed up order... but it's the best BBQ in Houston (and cheap!).

This poll is invalid without Kansas City as an option. Anything that mentions BBQ and don't mention Texas AND KC are worthless.

I'm from St. Louis and I live in KC. St. Louis shouldn't even be on the list. There are "St. Louis style" BBQ places, but the city itself isn't known for its BBQ, and "St. Louis style" BBQ doesn't even compete with what you get in KC. KC has the American Royal BBQ festival here, which basically validates its spot as a top BBQ locale.

As for someone that said that sauce wasn't a valid way of making BBQ and you should make it without sauce, that's crazy. If you don't use sauce you use a rub, and really, what's the difference? They're both substances that cover the meat and give it a different flavor.

i believe none of us ever said that sauce can't be used. our main beef was the op's comment that texas bbq has some sort of very sweet sauce on it. which it doesn't. and, in fact, some of the best joints in texas would throw you out of the place for putting sauce on it.

in fact, at the worst bbq in texas, the sause is boss (but it's very spicy, very thick, and not sweet)
