What sand man said. But you can over do the onion. I purchased a unit of egg salad from "Whole Paycheck" and it was WAY overloaded with red onion.

I also enjoy a bit of celery with my ES. A bit.

That's why celery is often put in. Either celery or finely diced onions are fine with me, comrade.

well, I started the second as a spin-off of the first, which itself was inspired by my breakfast (an egg salad sandwich from the local deli)
