Grilling up some hot dogs today! Threw in a couple Mexican dogs too, along with some cobs of corn (pre-soaked, of course):

Those meat weiners are disgusting. Wrapping bacon around them is akin to polishing a turd.

Mmm....

I just pulled my beef brisket. This is the wildest rub/mop combo I have ever done. Key ingredients include beer, coffee, paprika, chili pepper, and tabasco.

Maybe w/o the bacon, that didn't look so good.. Seems like it would be too salty, how was it ?

It was definitely too salty. I'm glad I made one without bacon. I used skinless beef franks with regular bacon and my wife had Oscar Meyer Light Beef Franks with Turkey Bacon. She said hers was good and not too salty, but mine was definitely too salty. Overall very excellent meal, a charcoal grill REALLY makes the taste of the dog come out. Mmm, so good. I don't know if I can go back to my George Foreman ever again lol.

Yeah mine were Nathans. Love em...and I don't feel like crap after eating them like when I do after eating at the Nathans restaurant down the street

Wow, that's quite a combination! So what's the trick for keeping your coals hot that long?

I refill it when my wireless temperature reader starts to fall below 200 or so. I usually put in another 15 coals. Let me tell you, a night time smoke sucks. The last one I did I started at midnight. Waking up every hour sucks.

They came out okay...you need a LOT of KC sauce to really enjoy the flavor, imo. I need to figure out a different way of adding cheese chunks because I think most of them melted out. The bacon was okay, but I think it would be better on top instead of in the burger.

Salmon, Red Potatoes, and White Rice for dinner tonight, mmm!

On the Grill

Ready to Eat!

I would have to say that this is the best meal I've made on the grill to date...the Honey Mustard Chicken was a close second, but it needed more honey and maybe a sweeter BBQ sauce. Here's the recipe:

Tools:
Grill
Ziploc bag
Aluminum foil

Ingredients:
Salmon fillets (I buy the pre-packed frozen kind)
Garlic powder
Salt (I like Kosher)
1/3 cup lemon juice
1/3 cup brown sugar
1/3 cup water
1/4 cup vegetable oil
1/4 cup soy sauce

Directions:
1. Thaw the salmon fillets and season generously with garlic powder and salt
2. Mix lemon juice, brown sugar, water, vegetable oil, and soy sauce in a bowl
3. Place seasoned fillets in the Ziploc bag, dump liquid mixture in, and turn to coat
4. Refrigerate mixture bags for at least 2 hours (I only marinated for 15 minutes and the flavor didn't soak through as much as I wanted)
5. Grill in aluminum foil packets for 15 to 20 minutes

Tips:
1. Lightly season with more garlic powder and salt during the last few minutes of cooking
2. Open the foil packets a bit to allow air to circulate while cooking
3. Pour some liquid mixture into the packet before grilling, it makes a great sauce!

This salmon recipe tastes like you got it at a high-end restaurant. It's really light and yummy. This would be great to cook for a date! It's super easy to make too - thaw, mix the juice with the fillet in the bag, cook for 15 minutes. Nothing to it! I also cooked up some Red Potatoes with it. For the potatoes, I washed them, sliced them down the middle, put a bit of butter between the halves, and wrapped them tightly in aluminum foil. Cook them directly on the coals for 30 minutes, rotating once 15 minutes in. Add butter, salt, pepper, sour cream, steamed broccoli, or whatever else you want. I also cooked up rice and tossed some soy sauce on it.
