Why do we tip anyone? Why does a waiter get 20% of my bill? Why doesn't he just get $5 or something regardless of what I order? If I get a $50 steak instead of a $10 salad, WHY DOES HE GET MORE MONEY?

You need a job and money first.

because I don't want him to water down my second drink
so why don't we tip at mcD's in fear of getting our burgers spat on?

I'm going to guess that the people who don't tip (in the US) have never worked in the service industry when directly serving customers. %20 barely covers customer bullshit half the time.

I mean, water it down by putting less alcohol in it, something that's perfectly within the bartender's capabilities of doing when I go back for a second and third and fourth drink after not tipping for the first.
it's an unspoken arrangement... "hey, I'm a good tipper, make my drinks stronger."
at McD's the people who take your money aren't even the people actually making your food (and in fact, most probably never know anything about the customer beyond the "1 big mac" order that flashes on their screens in back)

B/c those other jobs are being paid at least minimum wage while the bartender is not.
