Why is fatter milk more expensive?

Because if you take the fat out of the milk, you can sell it as other products. Therefore, you're still making the same amount (or even more) with skim milk at a lower price as you are with whole milk at a higher price.

I'm thinking because it is less watered down, which means they need more of it per gallon. I cannot drink anything but whole milk, lowfat, 2% and 1% taste absolutely horrid and as if they are already bad, as in curdled. JMH.

Where I live all milk is the same price. However, since they can use the milkfat they take out of milk to make butter the milk producers make more money on a gallon of milk they turn into lowfat milk and butter.
As to lasting longer, I have not heard that high fat milk lasts longer, but I do know that cream does last longer than milk so perhaps the fat does retard spoilage.

Fatter milk is more expensive because it is a lot more popular than skim.

They have to drop the price on non-fat to get it to sell in decent quantities.

Fat has been considered to be of higher value because of its higher energy content compared to the other components of milk.

4 calories per gram of protein and lactose

2. Skim off cream
3. Sell cream
4. Sell skimmed milk as lower fat
5. Sell full fat milk as milk + cream (which is what it is)
