600w might handle it, but it would be pushing it and a single large 12v rail would be highly recommended. As you can see :
here this is what Jonnyguru has to say about a roughly similar build as yours:
8800 GTX 768MB x 2 SLI bridge on build 1
Total: 527W DC.
Total +12V2: 7.2A
Total +12V1: 30.2A
Comments:
It's interesting to see the power consumption via the 8-pin EPS12V connector gradually go down with each set of cards. Going from the 6800 to 7950, we apparently unleashed a GPU bottleneck. But now it seems as if we're seeing a CPU bottleneck. Once again, a decent 600W, as long as it doesn't have two +12V rails, is going to be adequate."
So a decent 600w unit, with a single large 12v rail. Or you'll need a 700w PSU, with 2-4 12v rails. BUT, I strongly urge you to reconsider your build. You've obviously got money to burn, but you also want the fastest money can buy, right ? Well, wouldn't it SUCK to see a new 8800gts 512 or 1024mb come out in 30 days, which beats the 8800gtx HANDS down, consumes less energy, and will probably cost 400$, or at least less then the 8800gtx costs now? Besides, 680i mobo's suck for qauds, can they even handle Penryn btw ?
Anyways, yeah, hold of your purchase, I think I saw nvidia having trouble with the 780 chipsets, but if they do come out soon, you will have a better mobo to run that qx9650, and one that does SLI as well. And waiting 30 days, till 3 december, for the new 8800gts's would definately be worth it.
Oh, and last but not least, you do realize that some 750gb HD's, that cost roughly the same as a 150gb raptor, are often equally fast in game loading times, or even faster? Check this thread out:

Heck, in 1 month I hope to be seeing the samsung formula 1 HD's and seagate's new 7200.11 drives with 500gb and more, on a single platter.
Jup jup, if you are interested in high-end, and got to money to back it up, then it sure would be worth it to wait one month.
