There are signs on those "fill your own bag" bins of various dried fruits, nuts, etc that say no sampling. I'm going to assume they didn't have a no sampling sign next to the chicken.

Maybe you don't see or understand, but I always pay for the food. always. Seems like you are suffering from the same logic failure the other poster is.
Its happened six times grand total for me so far in 12 years of having this problem. I have supplies, I carry them in a backpack with me. The other poster just assumed I did this all the time, didn't even ask me. He assumed wrong. When I can stand the delay, I do buy the food then go outside the store and eat it (usually in the car) and then go back to shopping or go home if I am feeling really bad.
It's easy to sit here pecking at me since I am talking about it, go peck on the people that don't pay at all instead.
I have even gone back to correct them for undercharging errors even when it was my last money and I was hurting for money - more times than I have had to eat in this fashion. Can you say the same? Once they undercharged me on some big ticket items by almost a hundred dollars and I corrected them. Would you? Have you?
Even though I must use a wheelchair me and my aide actually take karts that have been placed willynilly in the parking lot in to the store when we go in, almost every single time we go. We do not put things we decide to return in random places in the store, we return them to the proper place, even when we feel like crap and are ill.

How so? As a libertarian you should support property rights. Obviously it was determined that the customers were not infringing on the store owner, but I think it was reasonable to ask about that.

I stopped at a White Castle a few months back and while the cashier was taking my money she took a drive thru order. She told me after taking his order that she knew who he was. She then told me he was in a few weeks before and jerked off and came all over the sink and wall in the rest room.
So yeah if it could happen at White Castle it could happen at Walmart.

I've grabbed sodas out of the cooler at a pizza place and sat down to wait for my pizza and have a drink, but I always pay for my drinks when I get my pizza. I generally, although not every time, ask the pizza guy if that's ok.
Never had a pizza place complain about that yet.
Grocery stores, a little different. I don't eat fruit off of the shelf. First, that's disgusting, and second, how are you going to pay for what you ate, if they cost per pound? Do those of you who do that, weigh their fruit before eating, and make a note of the PLU and weight?

I've been in our grocery store and let my kids eat the cookies or muffins from the bakery while we walk around and do the shopping.
We always pay for the items after the fact. It's not uncommon.
