No matter how much I love Europe, January is NOT the month to go sightseeing. January through March are quiet months, and the winter season is often at its worst, from Stockholm to Athens, from Lisbon to Warsaw.
Although, seeing that you're Canadian, almost any winter travel destination (with the possible exception of Iceland) would seem balmy to you...
Since you have 30 days to spare, and only the airfare is covered, to the tune of $1,400 (which really isn't much), your only concern should be the funds necessary for accommodation and incidental expenses (like food, heh!)
These being said, you could go to visit your Indian relatives, where you can probably get room and board for free (and the weather would be mild enough in January, unless you go some place in the mountains) OR you could succumb to the temptation and buy an all-inclusive South American/Caribbean vacation (Cuba should be pretty cheap that time of the year)

You should enjoy being your own master, doing things at your leisure and following nobody else's schedule. THAT is what makes a holiday so great!
