Are there a "good amount" of instances? Well, there's plenty to keep me busy...
More dungeons are on the way, but the ones that are already in the game have plenty of content to quest after. I've been into Blackrock Depths (BRD), for instance, at least 50 times - farming out gear for myself, unlocking hidden areas, and farming out gear for guildmates.
In the case of BRD *alone*, depending on the areas you want to tackle (BRD has
21 separate bosses & events), a run can take as little as 20 minutes or as long as 4+ hours. It's totally up to you to decide which areas you want to access - the instances in WoW are mostly non-linear, meaning you usually have the option to skip areas that you don't need.
