The first 10-15 levels are fast, but it does slow down considerably later on. I'm 39 and it takes me quite a while actually to level now, because the XP you get from monsters/quests doesn't increase proportionaly along with the XP you need to level.
You can start professions after level 8, I think. You have to speak with a profession trainer according to what you want to learn. Remember you can only learn 2 primary professions, though there's no limit to the secondary ones (fishing, cooking, first aid).

I know I didn't quite complete all of the quests. I have to finish the Hammertoe line by first killing Infernus, which then leads you back in for the Lost Tablets of Will quest. My Uldaman Update 2:
Bloodrunner, Jevonkearse, Mazonas, Wern, & myself did all the pre-instance quests last night. Jevon could only stay an hour and didn't have any of the quests so I'm expecting he will want to do them later.
After a quick run to IF we returned to Uldaman and added Sassy to our group. We when though the whole instance and complete all the quests. I picked up a better helm and 2H weapon as drops and got a better necklace as a quest reward.
I had a lot of fun and was well worth staying up until 2:00 am to complete the instance. Please let me know if anyone else needs to do the quests in or out of Uldaman and I'll be happy to join you.

I never spoke with any of them. In fact, the last straw was when one member in a group of mine yesterday kept ignoring me.
