that sounds like a good idea if you really can't afford or just don't want to use windows 7, windows 8 or windows 10.

No, it's actually a really terrible idea. Embedded XP is going to get security updates geared specifically towards point of sale devices. Devices that are used exclusively and specifically at retail frontends, that are not used for general web browsing and do not have random third party apps installed.

These things are getting the bare minimum security updates to maintain PCI compliance for what they're used for. Flipping a registry key to pretend your Win XP Home is a point of sale device does not magically give you a properly supported and secure operating system.

some of the worst updates came from microsoft when i had windows 7. i want security updates from microsoft for windows 7 not easy update from windows 7 to windows 10? my last windows 7 update said my copy of windows 7 was not valid and i had been updating it since release in 2009 bought from new. after lots of phone calls to microsoft i was getting no where so uninstalled and put windows xp on the same hard drive with 5 years worth of security updates and got a decent antivirus with firewall. one of my other windows 7 computers is now ubuntu for better security than anything microsoft.

I still have a fully functioning XP Pro install dual-booting with Vista 64 on an old X2. Having said that I rarely if ever use it and would never do anything mission-critical on it.

My work place is mostly off of XP and IE6 now. Though it's been a train wreck since the move, not because of the OS but because the network policies on the new domain would make Hitler proud. Freaking forced reboots in the middle of your shift and work related apps get uninstalled at random and lot of other annoyances like that.
