I like to try a new tasty marinade for my ribs. I usually only use dry-rub for seasoning. Nothing wrong with that, they turn out GREAT!

So what's a good marinade

stick with the dry rub.

Im from Memphis, and I have worked in 3 different BBQ shops here in town. Trust me when I tell you...DRY RIBS are the only way to go !!!

and give em a good smoke when your are cooking them. I use hickory chips. If I have time, i'll smoke them all the way, but otherwise, I'll steam the ribs first, reseason, then smoke for a bit for flavor and rest of cooking. It's up to you to make a sauce or glaze to put on the ribs, i'll usually use a combination of ketchup and worchestershire sauce.

most of the flavor comes from the rub.

just start with 3 ingrediants and make your own. and work on it from there.

ie.. chili powder, garlic, salt, pepper....

I seen these on food network a lot..

Before you dry rub the ribs.., should the ribs be dry or slightly wet ?

I guess you do indirect cooking ? or do you put it directly over flame ? I have both charcoal and gas burner..

I do indirect cooking with charcoal. Let them cook for ~2 hours at around ~200 - 225F.

I like to wrap them in foil w/beer and garlic, cook in the oven for 2.5 hours at 225, then rub and grill for ten minutes or so.
