Your favorite Steak marinades?

As I sit here chowing down on an enjoyable steak I marinated with some chipolte pepper, salt, lime juice, and some other spices I began wondering about other marinades to try. What are your favorites?

I would agree that certain steaks (filets) don't need a marinade, but a london broil for example, can benefit from a nice marinating.

I would agree that certain steaks (filets) don't need a marinade, but a london broil for example, can benefit from a nice marinating.

Absolutely true, London Broil should definitely be marinated. But I would not categorize London Broil as a steak any more than a pot roast is a steak.

I prefer without: salt + pepper is all that is ever needed, but I don't mind branching out sometimes.

recorded this Bobby Flay challenge where he prepares Jerk Steaks. That will be my next task.

Eh, London Broil is still often a flank steak, but I understand what you're saying and I could go either way with it.

Depends on the cut honestly. But a quick one with oil, vinegar (or lime juice), salt/crushed pepper corns, garlic and your favorite fresh herbs works on cuts that "need" a marinade. I'll throw some worchestchire (love that stuff) or A1 in in there as well. Careful if you use citrus, don't marinade for more than an hour or two. You're not making steak ceviche'.

I like your chipotle pepper idea. Bet that's pretty good. I guess canned adobo would be good as well.

if you marinade a stake with anything you should be shot, same goes with anyone that uses steak sauce.

Be sure to marinade the steak in pineapple juice for 1 day before cooking. Trust me.

EDIT: Not for the flavor. Though the little flavor it does add goes really nicely with Jerk seasoning.

FAIL. Most non-rib cuts need a marinade. They are too tough and the marinade will help with that. Along with cooking them longer and not as hot.

But then we're getting into arguing terminology. Most people consider a "steak" to be a rib cut. That's not totally true. A flank or skirt steak is a perfect example and one that really benefits from a marinade.

I use a house brand mesquite I get at my local supermarket.
I "marinate" it for 10 minutes.
When I barbecue it virtually all evaporates and really just leaves the tiniest hint of spices.
The garlic, mesquie, onion type flavors are VERY subtle, BARELY noticeable.

And yes, for good steak no steak sauce is necessary.

They're doing it wrong.


But really it's a terminology thing on what a "steak" is. Perfect example is flank/skirt which used to be a really cheap cut but because of marketing now it's the "in" thing and the price is way too high for what it is.

A bit of Jack Daniels or Johnny Walker, a bit of Worcestershire, a tiny bit of soy sauce, and a tiny amount of garlic = wonderful.

I don't commonly use steak marinade, but if I do I LOVE Dale's. It is a VERY good steak or burger marinade.
